This is the first recipe that we’ve made using vegetables from our very own garden!

Ingredients:

  • 10-14 ounces Cooked Chicken (You can use a rotisserie chicken)
  • 1 packet Taco Seasoning
  • Shredded Cheese
  • Sour Cream
  • Flour Tortillas
  • Salsa
  • Seasoned Bread Crumbs

Directions (Quesadilla):

  • Preheat the oven to 450 degrees
  • Shred chicken and place in a skillet
  • Add the taco seasoning and mix according to the packet directions
  • Simmer until chicken is fully coated.
  • Remove from heat
  • Take one tortilla, and place chicken and cheese on one side
  • Fold and place on a baking pan
  • Cook for 5-7 minutes at 450
  • Slice and top with sour cream and salsa

Directions (Zucchini):

  • Cut zucchini in half (lengthwise) and peel
  • Continue slicing the zucchini until there is 16 slices
  • Coat with olive oil and lay out on a cookie sheet
  • Sprinkle salt, pepper and seasoned bread crumbs evenly
  • Bake for 7-10 minutes at 450 degrees
  • Remove and serve
