This is the first recipe that we’ve made using vegetables from our very own garden!
Ingredients:
- 10-14 ounces Cooked Chicken (You can use a rotisserie chicken)
- 1 packet Taco Seasoning
- Shredded Cheese
- Sour Cream
- Flour Tortillas
- Salsa
- Seasoned Bread Crumbs
Directions (Quesadilla):
- Preheat the oven to 450 degrees
- Shred chicken and place in a skillet
- Add the taco seasoning and mix according to the packet directions
- Simmer until chicken is fully coated.
- Remove from heat
- Take one tortilla, and place chicken and cheese on one side
- Fold and place on a baking pan
- Cook for 5-7 minutes at 450
- Slice and top with sour cream and salsa
Directions (Zucchini):
- Cut zucchini in half (lengthwise) and peel
- Continue slicing the zucchini until there is 16 slices
- Coat with olive oil and lay out on a cookie sheet
- Sprinkle salt, pepper and seasoned bread crumbs evenly
- Bake for 7-10 minutes at 450 degrees
- Remove and serve
