Ingredients (Serves 4):
- 1 rotisserie chicken
- 1 tablespoon olive oil
- 2 packets burrito seasoning
- 2 cans beans
- 2 packages cooked quinoa
- 1 jar salsa
- Sour cream
Directions:
- Shred the chicken
- Prepare quinoa according to package instructions
- Heat olive oil in large skillet over medium heat
- Add chicken, burrito seasoning, beans, and quinoa to skillet, turn heat down to medium-low and simmer for 10 minutes
- Place mixture in bowl and add desired toppings (salsa, sour cream, etc.)
- Enjoy!
