Ingredients (Serves 4):

  • 1 rotisserie chicken
  • 1 tablespoon olive oil
  • 2 packets burrito seasoning
  • 2 cans beans
  • 2 packages cooked quinoa
  • 1 jar salsa
  • Sour cream

 Directions:

  • Shred the chicken
  • Prepare quinoa according to package instructions
  • Heat olive oil in large skillet over medium heat
  • Add chicken, burrito seasoning, beans, and quinoa to skillet, turn heat down to medium-low and simmer for 10 minutes
  • Place mixture in bowl and add desired toppings (salsa, sour cream, etc.)
  • Enjoy!
