Ingredients (1 serving):

  • Turkey Bacon – 2 strips
  • 1 egg – scrambled
  • Cheese – grated
  • Bell pepper – chopped
  • Flour Tortilla
  • Salsa
  • Diced Tomatoes

 

 

Directions:

  • Brown bacon
  • Scramble 1 egg
  • Chop bell pepper
  • Place two strips of bacon, egg, cheese, and bell pepper on half of the

tortilla. Add diced tomatoes (optional).

  • Fold over and place on griddle.
  • Brown one side – flip over and brown the other until cheese is melted.

 

Fruit & Yogurt Parfait:

Ingredients:

  • Strawberries
  • Blueberries
  • Vanilla Yogurt

 

Directions:

  • Cut strawberries into small slices
  • Mix strawberries and blueberries with vanilla yogurt
  • Place in a bowl (or parfait cup)
